ORANGE-GLAZED BABY CARROTS
The secret to this recipe is to cook the carrots very gently in order to retain their natural sweetness – doing so in orange juice enhances their flavour. With baby carrots, you should remove the shoots as soon as possible, as these rob the carrots of their moisture and goodness.
INGREDIENTS
500 g baby carrots, trimmed
1 tablespoon coriander seeds
80 ml orange juice
Salt to taste
Serves 4
1 Gently remove any dirt from the carrots and rinse under running cold water. Place in a large mixing bowl.
2 Stir the coriander seeds and orange juice into the carrots and mix well. Season with salt.
3 Place the mixture in a large saucepan and cook over low heat for 8 minutes until the carrots are tender and the juice reduces to a sticky glaze. Serve with roast spring lamb.
